This is a delicious and unusual cake recipe, that is well worth trying.
A Recipe for Cake Using Chocolate and Zucchini
Ingredients Needed:
0.5 Cup to One Cup choccie chips
three courgettes, approx. six inches in length, cut into shreds (approximately two cps)
One teaspoon ground cinnamon
2 half a cup flour
three eggs
1/2 C. real butter
1 teaspoon vanilla
A half cup of normal sugar
1 C. brown or muscovado sugar
1/2 C. canola oil
A half cup of buttermilk
four Tbls cocoa powder
1 teaspoon salt
Two tsp baking soda
Instructions:
Whilst you are preparing the ingredients, preheat oven to 325 F / 160 C.
Lightly grease a Nonstick 9" x 13" Sheet Cake Pan and put to one side.
In mixing bowlcombine sugars, the butter and the oil.
Break in the eggs, the vanilla and the buttermilk and mix well.
With a sifter or sieve, sift the cinnamon, cocoa, flour, salt and soda to make one.
Add to the mixture.
Mix in the shredded courgette and stir well.
Pour it all into the 9" x 13" tin and spinkle the top with chocolate chips.
Put into the hot oven and bake for about 45mins.
Allow it to cool a little, and let it cool on a wire rack.
